Santa Fe French Toast
Any of you train buffs out there will know that the food that the train kitchens produce is tops.
This recipe for french toast was originally created for the old Santa Fe line.


Ingredients
  • 3 slices of bread, 3/4-in thick
  • 4 eggs, slightly beaten
  • 1 cup half and half
  • 1/4 teaspoon salt
  • Vegetable oil
  • Powdered sugar

  • Directions
  • Use a firm, homemade-style bread.
  • Mom or dad can trim the crusts off, if they wish, and cut the slices into triangles.
  • Combine the eggs, half and half, and salt.
  • Here's the fun part: Dip the bread into the mixture, allowing the pieces to absorb as much liquid as possible.
  • Mom or dad will need to fry the slices in about one-half inch of oil heated to 325 degrees, browning both sides.
  • When they're nice and brown, mom or dad will place these onto a baking sheet and allow the slices to puff-up in a 400 degree oven for about 3 to 5 minutes.
  • Drain the slices on paper towels, and allow to cool down a bit.
  • Sprinkle with the powdered sugar, or our french toast fave, real maple syrup.
